Ingredients
Overnight
- 2c flour (300g)
- 1/2c starter
- 3/4c honey or maple syrup (250g)
- 1/2c melted butter or coconut oil (114g)
Next day
- 1c banana (about 2 large)
- 2 eggs
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla
- 1 1/2 tsp cinnamon
Instructions
- mix overnight ingredients and let sit overnight
- add mashed banana and eggs gradually, add other ingredients
- pour into greased or lined muffin tins
- bake @ 350F for 15-20 min
Notes
You can make this with 1c of any pureed fruit. I’ve tried pineapple it was nice.
To freeze, flash freeze on a sheet pan and then store in freezer bag. Microwave for 30sec to reheat.
